Do you have any details of the two deeds you mention (1740 + 1746)? Interesting that you think John ADDY could have been from Ireland. There doesn't seem to be a record of his marriage to Mary CURGHEY in IOM, so I suppose that could have happened in Ireland. I also found this page on manxnotebook www.isle-of-man.com/manxnotebook/famhist/families/awm1889/curghey.htm which says that Rev Matthias CURGHEY was married to Dorothea. Was it Dorothea that had links to Ireland? Any idea what her surname is?

I am reasonably sure that he is also related to Rev William EDDYE (1562-1616) from Bristol (I have a DNA connection with two Americans descended from Rev EDDYE).

Others have supposed he was the son of Richard ADDY and Elizabeth HERRING from Yorkshire, but I have ruled that out as they didn't marry until 1717, so that is too late.
