I'm sorry I wasn't much help.
You probably know that Morton was spelt Moughtin and variations in the IOM?
If you look at the burials here, you will see the variety:

You probably have also tried to find your grandfather's birth in Ireland, to see what was written about his parents? I know Ireland is difficult with so many records missing.
You wrote "Charles was reported born in Iom by his son, my grandfather... he states he (Henry?) was born in listowel IRE and his father was born in IOM, but he gave no dates. We believe Henry was born about 1838--1844 and Charles about 1800 .?". But you then wrote "I believe that Elizabeth Fitzgerald is Charles wife my grandmother". Do you mean gt grandmother? Have you any idea when she was born? Or where your gt grandparents were living?

The only Charles Morton bapt in the IOM within 10 years of 1800 was on 21 May 1792 in Andreas, father David MUGHTIN, no mother given (IGI extracted record).
Was this name used in Henry's family?

The IGI also has a Henry MORTON bapt 4 Sept 1822 at Redmile, Leicester, England, Father: CHARLES MORTON, Mother: ELIZABETH.

However there were another couple Charles M. & Elizabeth (MORET OR JORDAN) who married in 1817, living in Swinford, Leicester, who could be this Henry's parents - although her surname was given on other bapts, and Henry's mother was just "Elizabeth".
