Liz, you can see the Channel Islands on Ancestry on the same census list as England, Isle of Man, etc.
For example, under Search a Specific UK Census by Year see "1851 Channel Islands Census". After clicking on the census year you want you can choose Jersey under Residence: County or island.
De La Coeur could be tricky to find on the Ancestry index, so you'd need to try all spelling variations.
