I know there's nothing like seeing for yourself, but for what it's worth I just looked at the image of the 1881 page on Ancestry and it definitely says William E. Do [i.e. Ditto - Quayle]. The E is the same as the E in Emma Hoole and not at all like the G in Grandson, I'm afraid. However, that doesn't necessarily mean this isn't your man, if all the other details match: the enumerator could have misheard or miscopied, maybe.
