You have daughter Ann as aged 4 in the 1861 census index. If her mother died at the time of her birth as Peter suggested perhaps that 1857 burial was hers, and no-one thought to baptise the baby until 1859? The KK German register might record that it was a late baptism, and her age at the time (and her mother might be given as deceased).
