hi to you all who are looking into the balqueen history yes charlie was the chef my granfather was an assistant chef/baker i was 15 went to work with him during the school holidays i did 3seasons i still have a reference from w kelly for my service from 1962 i remember on wed and sun walter would come to the bakehouse put on his cloak and portion the chicken into 5 portions and when the service finished the carcase were saved and we had to take off the meat and that went to make cutlets for the next meal i have many memories
